Preheat oven to 425F and line a sheet pan with parchment paper. Mix the cooked quinoa, eggs, cheddar cheese, and salt in a bowl.
Add chickpea flour about 2 tablespoons at a time, sprinkling across surface, mixing well. Repeat until the mixture easily clumps when squeezed with one hand.
Place your oil or cooking fat in a dish close to where your lined pan is for shaping. Roll the mixture into 1-1.5" balls between your hands, dipping the rolled ball in the oil and giving a brief roll to coat. This recipe makes about 30 quinoa bites.
Bake 30-35 minutes until starting to turn golden brown. While the bites are cooking, melt the butter in a saucepan and add the Frank's sauce. Stir until combined. Once the bites are cooked, cool separate from the sauce if not eating right away.
