Buffalo Quinoa Bites

Here's a party-worthy savory snack based on quinoa!
Servings: 6

Ingredients

  • 3 cups cooked and cooled quinoa
  • 1 teaspoon salt
  • 1 cup shredded cheddar cheese
  • 3 eggs
  • 3/4 cup chickpea/garbanzo flour
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons butter
  • 1 cup Frank's Original Hot Sauce

Instructions

  • Preheat oven to 425F and line a sheet pan with parchment paper. Mix the cooked quinoa, eggs, cheddar cheese, and salt in a bowl.
  • Add chickpea flour about 2 tablespoons at a time, sprinkling across surface, mixing well. Repeat until the mixture easily clumps when squeezed with one hand.
  • Place your oil or cooking fat in a dish close to where your lined pan is for shaping. Roll the mixture into 1-1.5" balls between your hands, dipping the rolled ball in the oil and giving a brief roll to coat. This recipe makes about 30 quinoa bites.
  • Bake 30-35 minutes until starting to turn golden brown. While the bites are cooking, melt the butter in a saucepan and add the Frank's sauce. Stir until combined. Once the bites are cooked, cool separate from the sauce if not eating right away.

When I moved to my current job, it was the first time I found myself involved with potlucks on a large scale. Desserts are more my jam, but those are also a little easier for folk with less interest in cooking to pick up ready-made and bring to the party. I challenged myself to come up with a savory option that fit into most dietary preferences.

After some digging around and research, I decided to come up with a savory, vegetarian "meatball". Que a few less than stellar trials, I combined a couple recipes and tweaked and simplified the ingredients list until I had this creation. Chickpea flour turned out to hold together better than regular A&P flour.

If you're not a buffalo sauce fan, this recipe takes really well to any sauce! Asian sweet chili sauce, my Pibil sauce, a favorite BBQ sauce, any sauce is delicious!
